My Mother
Serves 4-6

These potato-topped pies can be made
from scratch using her raw mince.
My Father teaches me how to,
gut and fillet using the remains of a large joint. Never...a pearl but sea salt, / grated cheese, egg yolks, herbs, cream and spring onions

are just some of the ingredients which can be added. Take care—blood coats the sand and dirt and grit sticking to my skin. To dress it up use a pinch of grated
nutmeg, pinch of chopped fresh
rosemary and sherry vinegar.
Lightly brown...in olive oil until you have it
dappled bright like black drum. Once
combined, my Father smokes mackerel and ground mullet using leftover minced meat, while I watch
the fight / and spoon / my mother / into
an ovenproof dish / encrusted with red coral.
With my fingers hooked in the gills / I score
/ the thrashing Mother / with the tines of a fork.

My mother once told me that man was not meant to bake cottage pie with lamb.
I know that we unmake     her
The same way God made     her.
